Our Team, our History.


 Il Casolare was born out of 3 Italian boys who shared a passion for food and a dream to bring a unique experience of Italian cuisine to Melbourne.

Together, they created a warm and inviting meeting place for family and friends to come and enjoy the best Italian food, made with the finest local and imported ingredients.

At Il Casolare we remain faithful to the traditional method of preparing fantastic Italian food, while also offering novel and inventive recipes Our range of artesian woodfired breads and pizzas are all made with organic unrefined wheat and gluten free flours, using an aincent poolish yeast leavening method for a fantastically light and fluffy dough.
